Pumpkin gnocchi with spinach sauce

Gnocchi

Ingredients:

  • 250 g Mashed potatoes
  • 250 g Pumpkin puree
  • 50 g grated cheese
  • 1 ½ cups self-rising flour
  • Salt, pepper and nutmeg
Preparation:

Steam the potatoes and pumpkin until tender. Drain, mash and mix with the rest of the ingredients.

Sprinkle flour on the work surface and divide the dough into long strips. Cut the gnocchi into even strips and place them one by one on the gnocchi press.

Put plenty of water in the pot, add salt and a tablespoon of oil. When it boils, add the gnocchi and cook. over medium heat until they rise to the surface.

 

Spinach sauce

Ingredients:

  • 2 tbsp. olive oil
  • 2 tbsp. flour
  • 1 unit of onion
  • 500cc of vegetable broth
  • 200g of white cheese
  • 1 cup cooked and drained spinach
  • Salt and pepper to taste
Preparation:

Finely chop the onion and sauté in the oil. Add the flour and cook for 1 minute. Then add the spinach and white cheese, and finish cooking with the vegetable broth.

Then we correct the flavors, salt and pepper.
